BARBECUE: Our barbecue (pork, chicken and beef)
products are slow-cooked over real hickory wood. Meats are prepped
and 'rubbed' with our own special spice blends 24-hours prior to
cooking. Then, it's into the pits where glowing hickory embers --
and time -- do the real work.
Barbecue
is what we do, plain and simple.
We don't
do finger sandwiches or pot roast.
BURGOO: The 610 team does traditional KY-style burgoo
well, if we do say so ourselves. We are proud to be the "official"
burgoo cookers for the bi-annual Kentucky Folklife Festival.
The major difference in our burgoo and others is we pre-cook our
meats in the hickory pits. We've been developing and enhancing our
burgoo recipe since the mid-80s, and we think we've got it right!
What's really in it? You may never know -- because we
ain't telling!
SIDE ITEMS: We take great pride in producing a
complete barbecue meal, and the 610 team works hard to make sure
our side items are every bit as good as our meats. While some
BBQers buy their slaw in 5-gal. buckets and their beans in
waxed-cardboard containers, all of our side items are homemade
fresh -- from scratch -- using our own special recipes. No
pre-packaged side items here!
ON-SITE COOKING: For larger groups, we'll bring
our mobile barbecue "show" to your event site and cook just as we
would at a regional competition. (A few special arrangements may be
required.) Your guests will enjoy the sights and smells of an
authentic barbecue happening right before their eyes -- and under
their noses.
